"France has been my indispensable place to embark on the paths of the chocolate. I studied for years at I Maestri Chocolatier d’Oltralpe – The Chocolatier Teachers beyond the Alps.
On the day in which my future was to be decided, my teacher ordered me to immerse my arm in a big pot of boiling hot caramel. Putting aside my fear, I put my arm under cold water and passed the initiation test. Since then, my creative moments are the most intense, difficult, and exhausting.
"I had my most beautiful challenge when I succeeded in creating the real Mediterranean praline by utilizing the raw material of our land only: fresh and dry fruit, seeds, and roots".
